sweet potato and carrot curly fries

1. Preheat oven to 400 degrees F.
2. Spiralize the sweet potato and carrots.
3. Using scissors cut the potato "strings" into smaller pieces.
4. In a large mixing bowl, pour the olive oil over the spiralized vegetables. Stir to coat evenly.
5. Lay the veggies as flat as possible on a large baking sheet. Sprinkle with sea salt.
6. Bake for 25 - 30 minutes, flipping halfway through, and watching to make sure they don't get too crispy.
7. Remove trays and serve hot.
