miso salmon with quinoa

1. In a large bowl, whisk miso, agave, vinegar and 2 tsp oil. Add salmon, turning to coat. Marinate for at least 30 minutes.
2. In a medium sauté pan, heat remaining 2 tsp oil on medium- high. Add bell pepper and garlic and cook, stirring, for 1 minute. Add quinoa and cook, stirring, until toasted, about 2 minutes. Stir in broth, 1 cup water and salt and black pepper. Bring to a boil. Reduce heat, cover and simmer until liquid is absorbed, about 12 minutes. Uncover and stir in sesame seeds.

4. Place salmon on a nonstick foil lined broiler pan. Roast until fish flakes easily with a fork and is slightly golden brown, about 10 minutes. Serve salmon 1 salmon filet with 1 cup of quinoa.
